Uh oh, Spaghetti-O!

Is it sad that I've been looking forward to making this all day? Home time couldn't come soon enough.

I don't often feel like making meatballs- they're fiddly and messy but sometimes...you just want to smoosh your hands in raw meat. Or is that just me?

I've been making this variation for awhile now, with the original recipe adapted from The Pioneer Woman.

You'll need:

A small packet of minced meat
One finely chopped red onion
A teaspoon of garlic pepper
A teaspoon of chilli powder
A quarter cup of milk
1 Weetabix biscuit (yes really!)
A slice of brioche (this is the first time I've tried adding this!)
Salt for seasoning
Plain flour for coating
Preheat the oven to 200 degrees

In a bowl, add your mince, garlic pepper, chilli powder, half of the chopped onion and salt. Roughly mix it together. Chop and tear at the brioche slice into small pieces and add into the mix. Then crumble in the weetabix, and pour in the milk. The bread and weetabix will soak up the milk and keep the meatballs moist. I only put a small amount of milk- too much and it will cause the meatballs to fall apart when they cook.

Put the meat mix into the fridge to cool and firm up a little- now it's time to make the sauce!

To make the sauce, you'll need:

1 tin of chopped tomatoes
4 tablespoons of tomato ketchup
A couple of dashes of balsamic vinegar
A couple of dashes of worcestershire sauce
The remaining half of the chopped onion

That's it!

Take the meatball mix out of the fridge, and roll into little balls- then dredge them in the flour until they have a nice powdery coat. Mine always end up looking like chocolate truffles...

Ta da! Truffles!

Sorry. 

Heat up some butter and olive oil in a frying pan. Once the butter bubbles, throw the meatballs in and let them brown for a couple of minutes.

You just want to brown the outside, as they will finish cooking in the oven. 

Drain the excess oil and fat and pour in the tomato sauce mixed earlier. Put the pan in the oven and leave to bubble away for 30 minutes. The sauce will thicken and reduce, caramelising the meatballs and the tomato sauce will be the perfect blend of tangy and sweet. 

Cook the pasta of your choice- I love using linguine- and top with a few meatballs and sauce! You don't need a lot of sauce- a little goes a long way!

  5. Nah, I don't think it's wrong to be thinking about food all day.

    I've been looking for a good meatball recipe, might have to try this one out.
