Remember that TV show a few years ago, Pushing Daisies, where there was a pie man who could bring people back to life? I really liked it. And then they cancelled it after one season! But there was a episode where they made cup pies, instead of cupcakes. The concept was just so cute!
After browsing through Pinterest, I decided to give these cup pies- I mean hand pies- a go. I had enough shortcrust pastry dough leftover in the fridge, and I thought I'd use my Apple Pie recipe for the filling.
Here's what I used to make the pie filling:
2 Granny Smith apples
juice of half a lemon
4 teaspoons of plain flour
4 teaspoons of sugar
a teaspoon of cinnamon (I shook a little more in, so add to your taste)
You'll also need:
a jar of salted caramel

1 egg (to brush the pies with)
Mix all the ingredients together and roll out the pastry dough. Use a cutter to make 2 circles.
Spoon in about a teaspoon of the mix into the centre of the pastry and add a small dollop of the salted caramel on top. Lick the spoon. Eat some apple mix. Repeat.
Brush the outer edges with beaten egg and stick the other dough circle on top. The brushed egg will help it stick together. Pinch the edges with a fork and slice a couple of lines in the top to allow the steam to escape.
Brush all the pies with the remaining beaten egg and put into an oven at 200 degrees for 17 minutes. Yes, 17 minutes is a weirdly precise! But any longer and they'd burn, any less and they wouldn't be cooked through. Happy mediums!
Leave to cool for a few minutes- then grab one and go. Apple Pie on the go...Genius!
