PEANUT BUTTER & JAM COOKIES

There is no purpose to this picture other than to marvel at the glossiness of that egg yolk.

Back to the programme! I wanted to make something peanut buttery and after a browse through my kitchen cupboards, I came up with enough ingredients to whip up a batch of cookies. Yes, I say cookies. I also say trash. Third culture confusion.

After a bit of research on peanut butter cookie recipes, I took elements from a few recipes to come up with this easy peasy bake. You'll need: 

8 tbsps of plain flour
2 tbsps of caster sugar
2 tbsps of peanut butter ( I used the smooth kind, but crunchy will work too)
1 egg yolk
50g of butter
1/2 teaspoon of vanilla extract
Strawberry Jam

In a bowl, add everything in and mix together until combined. You'll need to use your arm muscles here!

The mix will start to meld together- keep mixing it until it's a rough ball of dough. With a teaspoon, scoop out a bit of dough, roll into balls and place them on a baking sheet.

Then, my favorite part- poke your finger into each ball of dough to create a well. It's like play dough for adults! We're going to fill these wells with our favorite jam. In my case- strawberry!

You only need a tiny dollop of jam for each cookie. Overfill them and you risk burnt sticky jam all over the baking tray.

Pop them into the oven at 180 degrees for 10 minutes...

...and eat!

These are soft and a little crumbly but wonderfully peanut buttery. The jam on top takes me back to the days of PB&J with the crusts cut off as a young'un. 

I whipped these up within half an hour- including baking time! Now, I'm saving these for Doctor Who this evening, but at the moment they're disappearing mysteriously off the plate. *side glance at Robin*

  2. These look incredible!! I've never actually tried peanut butter cookies but I imagine that these would taste amazing :) I definitely have to try it for myself soon
